Throughout human history, hospitality has developed as a benchmark for civilisation.

The concept of hospitality is extremely old. It is mentioned in writings dating back to ancient Greece, ancient Rome and Biblical Times.

Hospitality comes from the Latin hospis (убежище, кров). It means “to provide care / shelter for travelers”. The Latin word used for guests is hospites. Hospis is the root for the English word host where the p was dropped for convenience of pronunciation hospitality, hospice, hostel, hotel

Ancient Times
The Sumerians (who lived in what is now Iraq) were the first to record elements of hospitality in about 4,500 years Before the Common Era. They often moved and were able to trade. Traveling was cumbersome. Xenia consisted of two basic rules: 1) The respect from host to guest. The host must be hospitable to the guest and provide him/her with food and drink and a bath. Important guests in Russia are welcomed with a traditional karavaj (‘a loaf of black bread’) and salt.

Traditionally, dear guests were greeted on the doorstep with bread and salt. Bread and salt have long been considered symbols of abundance and prosperity, and salt acted as an amulet. To meet travelers with bread and salt meant to give them your wishes for peace and good. Guests, in turn, could also come with similar gifts to express their respect and wishing prosperity to the owner.

During the Roman era, there were a lot of travellers on military, diplomatic or political missions.
They needed accommodation available along the route.

St Benedict (born in Italy, 480 AD) is considered the founder of Western monasticism. In Benedict’s Rule the main focus for religious hospitality in chapter 53, is entitled The Reception of Guests. St Benedict established the rule of monastic life that was later to be adopted by most Western monasteries.

A hostel for pilgrims was already in existence in Jerusalem by 1070. It was founded in the 9th century as a religious order- KNIGHTS of THE ORDER of HOSPITALIERS. The hospitality of the Hospitallers was based around hostels, or pilgrim hospices, and caring for the sick for spiritual reward.

Medieval Times
In 1282 in Florence Italy, the great innkeepers of the city created an association for the purpose of turning hospitality into a business.

Current usage In the West today hospitality is rarely a matter of protection and survival. It is more associated with etiquette and entertainment. However, it still involves showing respect for guests, providing for their needs, and treating them as equals.
